Vine management and harvesting
Vinification and maturing
The grapes are delicately pressed in a pneumatic press for more than 3 hours, respecting the harvest. Then the juice is transferred to oak barrels where it is transformed under the effect of alcoholic fermentation. In order to keep the freshness of the Chenin intact, it does not undergo malolactic fermentation. The ageing in barrels lasts a minimum of 9 months for an exceptional expression of the grape variety and a beautiful complexity.
Storage
The Clos de la Thibaudière is splendid by its freshness but if you have patience, it will keep for nearly 20 years in a good cellar!

Sensory discovery
Appearance
Elegant pale-yellow colour.
Bouquet
This wine has delicate smells of citrus and white fruits. Its aromatic power is surprising.
Palate
The acidity and fullness of this wine are well balanced with lemon and citrus fruit notes and a mineral taste. Iodised and "salivating", this wine is lively and engraved, but also has a good lasting taste.
Wine and food pairing advice from the winegrower
Serve just chilled (12 to 14°C). It can accompany you throughout the meal and will be particularly appreciated with beautiful oysters, a scallop carpaccio, a smoked trout tartar, but also truffled white pudding with mushrooms or sushi. It is a partner of choice for refined dishes.
